Grab & Go Egg Muffins

Ingredients

10 Eggs

8 Cherry Tomatoes

100mL Milk

50g Feta Cheese

1 cup Baby Spinach

1 tbsp Chives

1 tsp Black Pepper

Method

Set your oven to 180℃ (356°F).

In a bowl, whisk together the eggs and semi-skimmed milk. Stir in the crumbled feta cheese.

Add the chopped chives, and spinach to the egg mixture. Season with black pepper.

Use a 12-cup muffin tray and evenly distribute the egg mixture into the cups.

Place the tray in the oven and bake for 20-25 minutes until golden. Allow them to cool before removing.
