Savoury Garden Omelette

A delicious combination of eggs, cherry tomatoes, and asparagus spears. This savoury omelette not only tantalizes your taste buds but also provides a wealth of essential nutrients. Ingredients

2 Eggs

4 Cherry Tomatoes

1 bunch Asparagus

1 tsp Olive Oil

Salt and Pepper to taste

Method

In a bowl, whisk two large eggs until well beaten.

Heat the olive oil in a non stick frying pan over medium heat.

Add the cherry tomatoes and asparagus spears to the heated pan. Saute them for a few minutes until slightly softened and then set aside.

Pour the beaten eggs in the pan. Allow the mixture to spread evenly.

Sprinkle salt and pepper over the eggs to your preferred taste.

Cook the omelette for a few minutes until the edges are set and the centre is still slightly runny.

Place the cherry tomatoes and asparagus on one half of the eggs, fold the other side of the omelette over the other, creating a half moon shape. Slide onto a plate and serve immediately.
